enchiladas

filling of lightly fried corn tortillas:

red sauce
green chiles
mushroooms
a lot of cheddar cheese

grease bottom of pan. After cooking covered with foil for 30 minutes at 350,
cover entire thing with alot of red sauce that has been sauteed in garlic and mixed with vegetarian ground beef. add to top of enchiladas:

diced bell pepper, fresh chopped tomatoes, onions, cilantro and jalapeno

 

barbara's rice

Spanish Rice:

Ingredients:
Bell pepper
Oil
Cilantro
Tomato
Garlic
Onion
Goya sofrito seasoning (2 heaping tablespoons)
Goya powdered cilantro and aciote seasoning (1 packet)
2 teaspoons salt
½ jalapeno
White rice

Sautee garlic, onion in oil. When browned add chopped bell pepper, ½ bushel of chopped cilantro, 1 tomato, ½ jalapeno diced and all seasoning and salt.

Add water. Let boil once on high. Cover and lower to simmer. Cook for 30 minutes. (do not remove cover)

 

rice and corn coffee

use brown rice or ground dry corn- put on stove and make black.

boil water separately, add rice to boiling water. use the liquid to make the coffee. add sugar and evap.

variation: you can make it with boba tea and ice

Arroz Caldo

Sautee garlic, onion and ginger. set aside

fry egg

mix all together and fry with sticky rice.

Add water. when boiling, cover with lid and put on simmer.

mamagrand tricks

for mongo, you can add the stems of brocolli cut up like zayote and even tuna fish

for malongay you can make it with ginger, garlic, onion and coconut milk and even add tuna fish

for soup, you can have green beans chopped up small, malongay, canned corn or fresh and use ginger that's been sauteed with garlic and onion and chicken boullion.

For ampalaya with egg and tomato, you can add soy sauce

basically you can add soy sauce, boullon, ginger, tuna to most recipes
