mona's beans and enchiladas

Beans:

Ing:

Pinto beans
stripples or vege bacon
vege sausage
diced onions, tomato, cilantro
1 head of garlic
jalapenos

1. cook beans with garlic
2. 1/2 way through-add bacon and salt
3. once beans are done, add the rest of the ingredients
4. boil a little longer to get flavor rolling


chicken enchiladas
fry corn tortillas
suatee tomato and onion and cilantro and chicken strips
then roll the corn tortillas with cheese, tomato/onion/cilantro/chicken strips
On top, add (crema salvadorena "la vaquita" brand)mexican sour cream, fresh chopped tomatoes and onions, and cilantro


easy tostadas
put cheese and 4 slices of jalepenos on top
bake 3 or 4 min

dirty rice recipe

make allan's beans and rice recipe but use dried beans and tomato sauce instead of diced tomatoes.

mix together and add creole or cajun seasoning, hot sauce, and fry in onions and garlic. you can also add more corn and pablano pepper

tuna sandwich

toast french bread slices- use land o' lakes butter
use tuna from can with oil
add mayo
layer with baby greens, cucumber, and hard boiled egg

also good with black pepper and soy sauce in tuna
tomato slices, cheese, and grilled onions

use a hearty bread like harvest market bread from crowley?
sliced avocado with salt sprinkled on it
sliced tomato with salt sprinkled on it
pieces of romaine lettuce
mayo

cut in half

cucumbers
watermelon
strawberries


also good with cucumbers, grapes,
chill in fridge

before serving, add fresh-squeezed lime and chili mix from mexican fruit cup place

cook salmon separately

add salmon to

baby greens mix
seasalt
cut up hard-boiled eggs
raw onion
diced tomatoes
cucumbers
sunflower seeds

no dressing needed!
