egg sandwich

minimal mayo
hard boiled egg

serve on toasted extra sourdough bread with a sprig of green leaf lettuce and chips

 

chicken lo mein

use the lo mein filipino canton variety

sautee garlic and onion
add snow peas
cut up green onion
carrots
and the lo mein
add a little water, soy sauce and oyster sauce so the lo mein wilts but not too much
cover so lo mein can wilt

in a forman grill-- salt and pepper the chicken

add chicken last and mix with other ingredients
add a little garlic powder, onion powder, cayenne pepper, salt and pepper to taste

 

sweet fried plantain

really easy!

make sure the plantain is somewhat ripe and sweet
boil
cut up and dip in sugar
melt butter in frying pan
pan fry the dipped plantain

lay ing in this order: (kinda like taco salad)

frito chips
pinto beans (cooked with cilantro, tomato, garlic, onion, cumin, salt, pepper)
cheddar cheese
lettuce
tomato
black olives
salsa
onion
dollop of sour cream

ellens green juice

Ellen's Green Juice

Ing:
Kale
Collard Greens
Mint
Distilled water
100% pineapple juice

Blend equal amounts of Kale and Collard Greens with distilled water and 10 sprigs of fresh mint
Squeeze through a strainer and discard pulp
Add a can of 100% pineapple juice

The mixture is the color of grass. You can adjust ratio of greens mixture to pineapple juice to suit your taste. This recipe is virtually fool-proof.
