Watercress Breakfast Sandwich

This is one of my FAVORITE breakfasts. OMG. so good.
All you need is:
1 or 2 over medium eggs
3 pieces of turkey bacon
1 tablespoon REAL mayo
a handful of watercress
2 slices of tomato
2 pieces of crusty wheat bread lightly toasted

Just stack everything, making sure to salt and pepper the tomatoes...
and then RIGHT before you take a bite, squeeze it all so that the egg yolk runs onto your plate:)
Add a little freshly ground sea salt to the egg yolk on your plate and then.... THIS is the most important part...
Every time you take a bite, make sure to sop up the sandwich in the egg yolk. YUMMY for my tummy.
I eat it and sip on overly creamy coffee. The perfect combo.
