vegetarian chicken fajitas
serve with salsa from taco cabana, taco cabana flour tortillas, fresh squeezed lime, and sliced avocado
Use the morning star chicken strips and frozen peppers/onions
thaw both. drain water from peppers/onions
marinade chicken strips in chicken fajita seasoning (generous amount), creole seasoning, and extra black pepper
dice garlic
heat skillet in corn oil or vegetable until very hot, throw in fresh onions and garlic, then frozen peppers, until everything is grilled
In a separate pan, do the same thing with the chicken strips
put chicken strips, grilled peppers and onions in flour tortilla. top with slice of avocado, squeezed lime and salsa and enjoy!

dad's mongo patties
Boil mongo. It should be fully cooked but it should still remain whole and not mashy. Drain water.
1 cup cooked mongo
1/2 cup floor
1/4 cup water
1/4 cup thinly sliced onion
2 stems of sliced green onion leaves
salt or tayo to taste
Combine abovementioned ingredients. See to it that floor and mongo bind in a consistgency of playing clay toy. Form like meat balls then press it against your palm forming a mini hotcake. Deep fry.

mom's tofu and green beans
fry tofu (sautee in soy sauce)
cut in cubes
sautee a lot of garlic, onions.
After onions are brown and wilted, add green beans (sliced thinly) (put on high)
Before fully cooked, add soy sauce, lime. Mix. Lastly put black pepper and sugar.

lisa's tilapia and swiss chard
thaw frozen tilipia by soaking in water
pat salt and pepper (cover entirely)
pan fry high heat grapeseed oil till brown and crispy!
You can also cut tilapia in pieces before frying for crispier pieces
Swiss chard- use like spinach. sautee in olive oil, onion and garlic.

mamacita's caldereta
follow instructions on packet-- veges are carrots (baby carrots cut in half), potatoes, peas, and bell pepper
Use mamacita seasoning on gluten and then deep fry. use gluten as meat.
