pinto beans

Ingredients:

pinto beans, cilantro (1/2 bushel), half an onion, 1 full bushel of garlic, oil, cayenne pepper, salt


1. Soak beans overnight or longer.

2. Sautee garlic, onion, cilantro in oil (in that order--you can also add tomato) (on high heat)

3. Add beans and sautee without water first. (on high heat)

4. Add water, salt liberally and add three dashes of cayenne pepper. (on high heat)

5. Let boil once without lid. (High heat) Cover and simmer until cooked. (low heat)


recipe can work with any legume in place of pinto beans
